“Apple Pie” for Breakfast

This is a modification I made to a Jennifer Hudson-approved breakfast from the Weight Watchers Web site. (J Hud is the new spokesperson for Weight Watchers, if you didn’t know, having gotten *extra* svelte after giving birth.)

3/4 cup Kashi Heart to Heart cereal
1 cup fat-free plain yogurt
1 apple (I like to use Granny Smith, but go with your favorite.)

Measure a cup of yogurt, place in a bowl.
Core and skin the apple, dice it, and microwave for 1 minute to soften.
Add to yogurt, add cereal; mix ingredients.
Add Splenda and cinnamon to taste.

I like this because it’s like getting dessert for breakfast! Very delicious, and you’re covering most of the food groups. Plus, the yogurt makes it feel more filling than if you used milk.

I’ve taken this meal to work, by putting the yogurt, apple and seasoning in a container and the cereal in a bag, so the cereal stays crunchy.

(As an alternative, the Jennifer Hudson version used strawberries rather than apples, and no cinnamon. You could also use vanilla fat-free yogurt, but it has more calories.)
