Bean Burrito Breakfast

Sometimes getting out the door in a timely manner, with every “i” dotted and every “t” crossed is a major struggle for me. Fortunately, it is possible to whip up quick breakfasts that do not sink my eating plans. This is a vegetarian item that I find to be quite filling:

  • Fat-free refried beans (regular or spicy), 1/2 cup
  • Reduced fat cheddar cheese, 1 oz.
  • Fat-free flour burrito

Spread the beans on the tortilla. Top with the cheese. Roll up and heat in the microwave for 30-40 seconds.

I eat this as-is, but you could also add hot sauce, peppers and onions, grilled veggies, or pickled jalapenos to spice things up.
